Oh pancakes! I love you so much! You are fluffy, sweet, and I adore eating you. My love for you has now been passed on to my son. Thank you for spreading smiles of joy around our kitchen table.
Breakfast is my favorite meal of the day and I could eat these pancakes for breakfast, lunch, and dinner. In an effort to cut our food budget I attempted to recreate my favorite quinoa pancake in the family kitchen. After a few attempts I am confident that this recipe is the winner! Try it out for yourself this weekend and see.
Ingredients
- 3 cups cooked red quinoa
- 3 cups all-purpose flour
- 2 tablespoons baking powder
- 6 large eggs
- 1 cup vanilla greek yogurt (I use Trader Joes)
- 1/3 cup of milk of your choice
- 1 fresh lemon squeezed
- 1 tablespoon brown sugar
- 1 tablespoon pure vanilla extract
- 1 bag of frozen blueberries (I use the wild organic blueberries from Trader Joes)
Directions
- In a medium bowl, whisk together quinoa, flour, and baking powder. In another medium bowl, whisk together eggs, yogurt, milk, and brown sugar until smooth. Add egg mixture to flour mixture and whisk to combine.
- Add vanilla and lemon juice and whisk again. Rinse frozen blueberries under water and drain. Next gently fold in blueberries.
- Lightly coat a large skillet with butter or cooking spray and heat over medium. Drop batter by 1/4 cup onto skillet. Cook until bubbles appear on top. Flip and cook until golden brown on underside. Repeat.
- Makes about 12-14 pancakes. Your taste buds will soon be thanking you. Enjoy!

Caden loves them so hopefully Liam will too! You totally inspired me with how you are feeding Liam :). After reading all the yummy food you were feeding him I began to add more variety to Caden’s diet :).

Hi Elizabeth! Yes you can use any quinoa, not silly at all. I just like the red because you can see it in the pancakes :).

So I made these last night. I changed it a little, I like to use oat flour instead of all-purpose flour. I was not sure how it would turn out so I just did 1 1/2 all-purpose and 1 1/2 oat flour. I also didn’t have any greek yogurt so I used Fry’s carbmaster vanilla yogurt. The batter also turned purple and the kids loved that (I think this is because I did not rinse the blueberries and the kids like to stir a lot). Next time I am going to try with all oat flour and see how they end up. Thanks for posting this recipe, love it!
Hi Breanne! So glad you all liked them! I have used half oat and half brown rice flour when making these and found that makes them less flaky. Sometimes when I use all oat flour they tend to get a little crispy. Let me know how they work out for you! Glad you enjoyed the recipe!

I am 28+ weeks pregnant and trying to stay as active as possible. I have really been slowing down these last two weeks and I am worried I won’t be able to keep up with my current workouts!

I’ve started making batches of waffles for freezing and haven’t found a recipe that I absolutely love yet. How do you think theses would work in my waffle iron? And what about substituting the blueberries for some other fruit? My toddler isn’t much of a blueberry fan.
So I definitely want to make these I tried to look up ways to actually cook the quinoa. Since I’ve never used quinoa before and this one lady said that one cup of Quinoa = 3 cups cooked. Soooo this is going to sound crazy but do I need to pour out 3 cups of quinoa or just one??? Sorry, I just want to make sure I don’t mess up your recipe 🙂 lol.

I love quinoa in savory recipes! Wondering how it would be as a sweet meal… Do you eat these pancakes dry or with syrup or something drizzled on? It seems like they would have all the flavor they need in the batter, I was just curious!
They are very flavorful. We eat them plain sometimes, but most of the time serve them with maple syrup and greek yogurt.
